Our Japanese chefs are very experienced in Japanese Ramen, and they have acquired skills for the making of exquisite ramen directly from Mr. Hideto Kawahara, a chef who possesses a Bib Gourmand award from Michelen. Currently, a few of our Dutch chefs are learning our unique way of cooking ramen at our kitchen!
Ramen is a traditional Japanese dish loved and enjoyed by people in Japan, spanning generations as well as throughout history. Different variety of noodles can be boiled and served in also different variety of broths, thus the types of ramen you can have are countless. There are approximately 51,000 ramen restaurants in Japan, whereas in comparison, the number of sushi restaurants sums up to approximately 45,000. From these statistics, ramen is very popular among Japanese people!
Our noodles are made accordingly to the unique tastes of our broth. At Vatten Ramen Kerkstraat, we have a variety of noodles available for the customers to try and experiment with the different broths to their liking! These noodles include Matsu straight noodles, which are special dried-noodles named ‘No. 26’ from Hakata, Japan as well as curly al-dente egg noodles (Tokyo and Sapporo). For those who require gluten-free dishes, we also serve gluten-free noodles!
At Vatten Ramen Kerkstraat, we serve all-natural white broth soup made from locally-produced Dutch chicken, which is deeply stewed for two days in our kitchen by our Japanese chefs. Along with the chicken, we add soy sauce, bonito flakes & seaweed soup, which adds the traditional mild taste that makes ramen. Our chefs have also developed a broth that is completely animal-product-free, made out of mushrooms and kombu, for our vegetarian fans.
As we produce ramen in Amsterdam, we have achieved in combining Japanese traditional cooking methods and modern Western tastes, which results in ‘a beautiful fusion of food art in bowls’ being made. This mixture of good parts from both cultures is our core value in our restaurant, as we appreciate and respect all people living in the beautiful city of Amsterdam as well as our traditional values back in Japan.
